Sure Thing Syllabub

I have to be careful what I write here, for example my parents-in-law read it and we don't want to get into the Too Much Information territory. I call this Sure Thing Syllabub for two reasons. Firstly because it is foolproof, there is no cooking involved at all; if you can measure and wield a whisk you're in business. Secondly... well, let's just say that if you serve this syllabub and you don't get lucky you are dating the wrong person.

Sure Thing Syllabub
1/3 cup Cointreau
2 tablespoons sugar
Good drizzle maple syrup
1 tablespoon lemon juice

Whisk these ingredients together until sugar dissolves
Add 1 cup heavy cream, continue whisking until mixture forms soft peaks i.e when you lift the whisk a little peak rises on the cream .
Take four almond or ginger biscuits and put them in a ziploc bag. Gently crush them.
Take two martini glasses. Pour half the biscuit crumbs into the glasses, top with spoonfuls of the cream, finish with the remainder of the biscuit crumbs. Chill until needed. Enjoy!
